How It Works:
The product (usually flat or packaged, such as fish fillets, meat patties, vegetables, or ready-to-eat meals) is placed between two metal plates.
These plates are cooled by a refrigerant (such as ammonia ) circulating inside them.
The plates apply pressure to ensure maximum contact with the product, allowing for fast and uniform heat transfer.
